Orballo grapes are carefully hand-harvested in small 20 kg cases to maintain the highest quality. The harvest undergoes a six-hour cold maceration at 10ºC to extract aromatic compounds, followed by gentle pressing to separate the delicate 'yolk' musts. This must is then racked for clarity before fermentation, which occurs naturally in two 5,000-liter stainless steel tanks at a controlled temperature of 16ºC. The fermentation process lasts between 2 to 3 weeks, resulting in a wine that is expressive, pure, and reflective of the vineyard’s character.
