Winemaking can often become a predictable process focused on minimizing errors,” says Cellar Master Corlea Fourie. “But that approach leads to stagnation, so we constantly explore new methods, blending innovative techniques with ancient traditions to create something truly exceptional. That’s where Fides comes in.” Although rare today, orange wines have been crafted for over 6,000 years, originating in Georgia and Northern Italy, and are made by fermenting white grapes on their skins, imparting a distinctive golden hue, complex texture, and tannic depth. Corlea describes these wines as showcasing “the next level in fruit maturation.” Fides underwent 20 days of natural fermentation with daily punch downs or pump-overs, followed by gentle pressing and aging in seasoned Russian oak for six months, and an additional 18 months in the bottle before release.
