Winemaker Jean-François Bordet, whose family history in Chablis dates back to 1590, oversees an estate of 24 hectares on the right bank of the Serein River, with a south and southeast exposure. The soils, a blend of limestone marl and Kimmeridgian, contribute to the wine's distinctive saline profile. Managed sustainably, the vineyards produce grapes for Domaine des Anges from vines aged 25 to 40 years, partly estate-grown and partly from long-standing partner growers. The must is vinified in stainless steel to retain freshness, and the wine spends nine months on fine lees to enhance richness and complexity before bottling. The resulting Chablis is fresh, pure, and mineral, with a lovely balance of intense peach and apricot flavors, uplifted by bright acidity, refreshing apple, and floral notes.
