PRODUCER INFO Prepare to be dazzled by the ingenious Emmanuel Rybinski, a true maverick taking the Cahors wine scene by storm. Nestled atop a majestic iron-rich plateau on the southern fringes of the appellation, Emmanuel's ten-acre estate is a sight to behold. So pure are the iron chunks strewn across his vineyard that they could be sold to a smelter, a testament to the remarkable terroir he cultivates.

Emmanuel's vineyard boasts an exceptional elevation, safely perched above the fog line, bestowing upon him the freedom to practice organic farming with ease. The rows, meticulously plowed by majestic horses, are tightly spaced, ensuring the vines receive the utmost care and attention. In recognition of his dedication, the estate was classified under rational agriculture in 2005, and in January 2014, Clos Troteligotte proudly attained certified organic status.

But the intrigue doesn't end there. Emmanuel's family home is a captivating masterpiece, an off-the-grid Eco/DIY sanctuary he ingeniously fashioned from a 17th-century stone barn. It's a living testament to his visionary spirit, seamlessly blending history with innovation.

ABOUT THE WINE Step into Emmanuel's world of winemaking as he presents his most enchanting creation. This exceptional Malbec is infused with 15% Merlot, a venerable regional tradition that lends a sumptuous fruit structure to the dark and mineral-driven character of the Malbec grapes. Brace yourself for a delightful journey as you experience the essence of his artistry.

Allow us to acquaint you with the term "Knom," or "Canom" in the local vernacular—a French expression for the cherished glass of wine ordered at the neighborhood bistro. Picture yourself saying, "Travernier, sers moi un canom!" as you savor the essence of this magnificent vintage.

Vintage: 2018 | Wine Type: Red Wine Varietal: 85% Malbec / 15% Merlot Origin: France | Appellation: Cahors Elaboration: Emmanuel handpicks the grapes early, defying appellation standards, ensuring a vibrant expression. The grapes undergo fermentation and aging in unlined concrete squares, embracing their raw essence. A cold maceration process at 10 to 12 degrees Celsius unveils the wine's subtle fruity aromas without the interference of yeasts or enzymes. The wine then undergoes a slow and cool fermentation process, manually cared for with delicate cap punch-downs. Native yeasts dance their magic during the 10-day journey. The wine matures for 12 months in cement vats, patiently developing its distinctive character.
