Nestled along the shores of the Danube River in North West Bulgaria, Bononia Estate’s vineyards enjoy the perfect balance of a continental climate and river influence at 35-50 meters above sea level. Here, carefully selected, hand-picked Chardonnay grapes are whole-bunch pressed before undergoing fermentation and maceration in stainless steel tanks. The wine spends just a month in French oak barrels, gently refining its texture without adding strong oak flavors. The result is a vibrant, medium-bodied Chardonnay bursting with ripe peach, apricot, and a hint of tarragon, complemented by honeydew melon and a rich, mouth-filling texture. Reminiscent of a New World style, this Chardonnay pairs wonderfully with creamy pasta, seafood, and soft cheeses.
